  1. We start with zucchini, wash it and remove the head, then dig it out so that it remains a little thick, then set it aside.

  2. Fry the meat in oil or ghee with half a spoon each of salt and black pepper and stir until the meat is cooked, then add the pine nuts and stir so that the filling is ready.

  3. Put the filling inside the zucchini and we fill it completely and repeat the process until the amount of zucchini is finished.

  4. Heat the frying oil, then put the zucchini in it until it acquires a color, then drain it well and put it in a large pot and pour hot water over it so that it submerges it and leave it aside for about 20 minutes until we have a broth rich in the taste of zucchini.

  5. Put a colander over the cooking pot and filter the yogurt in it, then dissolve the starch with half a liter of water and filter it over the yogurt, then put a tablespoon of salt and beat the ingredients with a hand whisk until they mix well.

  6. Drain the zucchini from the broth and put it on the strainer aside until we get rid of the water completely.

  7. Put the yogurt on a high heat and continue to stir until bubbles appear and the yogurt begins to boil and takes a coherent consistency, then add a little zucchini broth, about a quarter or half a cup, and stir.

  8. Put the zucchini in the yogurt and leave it for 5 minutes, so that the Sheikh Al-Mahshi Syrian dish is ready to be served.
