How to prepare meat Sfiha

  1. In a wide bowl, put the white flour, brown, salt, baking powder and olive oil and knead the mixture well to combine, then add the eggs and continue kneading.

  2. In another bowl, dissolve the yeast and sugar with warm water and set it aside for 6 minutes, then put it on the dough and knead the mixture, then add the milk and continue kneading for a third of an hour to get a cohesive dough. If the dough is soft, add a little flour to it.

  3. Put the dough, cover it with a nylon bag, and put it in a warm place for two and a half hours until it ferments.

  4. Meanwhile, we prepare the filling, put the meat and onions in the cooking pot, mix them well to get a dough, then add to it the spices, salt, pepper, cumin, sumac, and tomatoes, mix them and then put them aside.

  5. Mix the tahini, milk, lemon juice, and two tablespoons of water, to get a soft mixture, then place it over the meat filling and mix well.

  6. Cut the dough into round discs, and roll to the desired thickness. Put a tablespoon of the meat filling on it and press it gently with the palm of the hand, add the roasted almonds, repeat the process on the rest of the meat tablets.

  7. Put the prepared plate in a tray greased with olive oil. Then we put the tray in the hot oven at 180 degrees and leave it for 20 minutes, then take it out, put the meat plate on a plate and serve hot with juice or any favorite drink.
