Lokma or Lokmat Al Qadi, is a famous oriental dessert, characterized by its circular shape and golden color, and it is fragile and easy to melt in the mouth. The beginning of its discovery belonged to the Greek people and was called loukoumades, and when it moved to Arab kitchens, its name changed to Luqaimat, while the Egyptians called it the Lokmat Al Qadi or the dumplings. Lokma is always associated with Ramadan tables and holidays, and it can be prepared with several fillings such as cheese, chocolate and others. It can be served plain and it is sufficient to decorate it with sugar, syrup or honey. It can also be served with ice cream or coffee and hot drinks.

Luqaimat Stuffed with Crunchy Cheese

- Knead the flour, yeast, milk, water, sugar, salt and baking powder in the mixer, then continue kneading with your hand until you reach the consistency of a suitable dough similar to the consistency of cake dough, and leave the dough to ferment for a few hours and double in size.
- Cut the cheese into medium-sized cubes and put them in a bowl on the side.
- Roll out the dough with a rolling pin.
- Cut circles of dough with the cutter, then put a cube of cheese in the center of each dough.
- Roll the dough into a ball around the filling.
- Fry the balls in the heated oil in a deep frying pan, stirring constantly, until they become soft and golden in color.
- Drain the Luqaimat from the oil on a paper towel and serve hot.

- Cut the cheese into medium-sized cubes and put them in a bowl on the side.
- Roll out the dough with a rolling pin, then cut circles of it with the cutter, then put a cube of cheese in the center of each dough.
- Roll the dough into a ball around the filling, then fry the balls in the heated oil in a deep frying pan, stirring constantly, until they become soft and golden in color. Drain the bits of oil on paper towels and serve hot.
