Prepare the lentils:

  1. Wash the lentils, and boil them on a low heat for a third of an hour.

  2. Take two cups of lentil boiling water, put them aside to cook the rice, and add salt to taste.

Rice preparation:

  1. Put the vermicelli in the oil in a dish, and leave it to become golden brown.

  2. Add the drained rice, leave it on the fire for four minutes, then add: mastic, salt and black pepper.

  3. Pour the lentils boiling water over the rice, leave it until it starts boiling, then reduce the heat.

  4. Cook the lentils on low heat for ten minutes.

  5. Add half the amount of boiled lentils, cover the dish, and leave it for five minutes.

Prepare the tomato sauce:

  1. Heat a little vegetable oil, add garlic, and stir for several minutes.

  2. Gradually pour the vinegar, and leave the mixture to boil.

  3. Add each of: water, tomatoes, a little salt, pepper, cumin and hot pepper.

  4. Leave the mixture on the stove to boil, then reduce the heat.

Prepare the fried onions:

  1. Put the oil in a second pan, then add the onions, and saute until they become crunchy.

  1. Put the oil with garlic on the fire, and stir it a little without changing its color.

  2. Add each of: salt, water, pepper, garlic, vinegar, lemon juice and cumin. Stir the mixture, put it on a medium heat to boil, then lift the dish directly.

Applying the ingredients

  1. Put the pasta and chickpeas and add all the ingredients.

  2. Add the onions on top, and serve the koshary next to the tomato sauce.
