  1.   1. Soak the beans for 24 hours in warm water.

  2. Drain the beans, wash them with water, and transfer them to a large saucepan containing 2 liters (8 cups) of water. Put the pot on the stove and let the water boil.

  3. Add the bicarbonate of soda and let the beans cook quietly over low heat for 4 hours. To test the extent of maturity, we take a bean and mash it with fingers, and the sign of maturity is to mash it quite easily.

  4. Drain the beans from the broth and transfer them to a large serving bowl.

  5. In another bowl, mix garlic, lemon and salt, then pour over the beans.

  6. Add tomatoes and parsley and distribute the oil on the plate.

  7. Serve it with Syrian bread and green onions on the side.
